Pizza Africana

The Swedish curry pizza, often known as Pizza Africana, is a legendary sweet and savoury combination of sliced banana, mild curry powder, and ham or chicken. Baking this in the CASO Design PizzaChef 430° allows you to leverage its intense 430°C top and bottom heat, yielding a beautifully blistered crust and a lightly caramelised topping in under two minutes.

Ingredients
  

  • 250g Pizza Dough
  • 3 tbsp Tomato Passata
  • 70g Mozzarella
  • Small chunks Pre-cooked Chicken Breast
  • 1 Banana
  • 1-2 tsp Yellow Curry Powder
  • Handful Salted, roasted Peanuts

Method
 

  1. Preheat the PizzaChef 430° – Approx. 15 min.
    Plug in your CASO PizzaChef 430° and select the Manual mode or the Neapolitan style setting. Adjust the temperature to 400°C for the top heat and 380°C for the bottom heat. Let the cordierite pizza stone heat up fully until the digital display indicates it has reached temperature. 
  2. Stretch the Dough – 2 min.
    On a lightly floured surface, gently stretch your dough ball out into a 12-inch circle using your hands. Keep the edges slightly thicker to form a nice crust, and avoid using a rolling pin so you keep the air inside the dough.
  3. Layer the Toppings: 3 min. 
    Transfer the stretched dough onto your aluminium pizza peel. Spread the curry-infused tomato passata evenly, leaving a small border. Scatter the mozzarella, arrange the ham strips or chicken, and lay the banana slices on top.
  4. The Crucial Dusting: 30 seconds. 
    Generously dust the entire top of the built pizza with your remaining mild yellow curry powder. This second layer of spice directly on the toppings is the secret to getting that signature golden Swedish colour and aromatic finish. 
  5. The Flash Bake: 90 to 120 seconds. 
    Launch the pizza off the peel directly onto the hot stone. Close the triple-glazed door. Watch through the viewing window as the high heat cooks the pizza incredibly quickly. Rotate it 180 degrees at the 60-second mark using the peel to ensure an even bake. Remove once the crust is blistered and the bananas are warm and slightly jammy. 

Notes

The Game Changer: Immediately after pulling the pizza out of the PizzaChef 430°, scatter the chopped salted peanuts over the top. The intense, salty crunch against the warm, sweet banana and aromatic curry completely transforms the dish.
