Courgette & Feta Waffles

Ingredients
  

  • 1 Medium courgette (approx. 200g) finely grated
  • 100 g Feta cheese finely crumbled
  • 190 g Plain flour
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 Large eggs
  • 175 g Greek yoghurt thinned with 60ml water
  • 3 tbsp Olive oil
  • 0.5 lemon Zest

Method
 

  1. Prep the Courgette (The "Dry Squeeze"): After grating the courgette finely, place it in a clean kitchen towel or cheesecloth and squeeze it over the sink until no more liquid comes out. This is the most important step for a crispy waffle!
  2. Mix the Base: In a large bowl, whisk together the flour, baking powder, salt, pepper, and lemon zest.
  3. Combine Wet: In a separate jug, whisk the eggs, oil, and your yoghurt/water mix.
  4. The Batter: Pour the wet ingredients into the dry. Whisk until mostly smooth.
  5. The Mix-ins: Gently fold in the squeezed courgette and the crumbled feta. Ensure the feta pieces aren't too bulky so they don't block the WaffleUp funnel.
  6. The Pour: Using the WaffleUp measuring ladle, pour the batter steadily into the top.
  7. Bake: Cook until the machine beeps. These waffles are naturally a bit softer due to the veg, so a higher heat setting (Level 4) helps get those edges nice and golden.
