Cinnamon & Apple Waffles

Ingredients
  

  • 1 Small apple peeled and very finely diced
  • 250 g Plain flour
  • 40 g Brown sugar
  • 1 tbsp Baking powder
  • 1.5 tsp Ground cinnamon
  • 0.5 tsp Salt
  • 2 Large eggs
  • 350 ml milk
  • 115 g Melted butter
  • 1 tsp Vanilla extract

Method
 

  1. Whisk the Spiced Base: In a large bowl, combine the flour, brown sugar, baking powder, cinnamon, and salt. (The brown sugar gives it a deeper, caramel-like flavor).
  2. Mix the Liquids: In a separate jug, whisk together the eggs, milk, melted butter, and vanilla.
  3. Combine: Pour the wet ingredients into the dry. Whisk until just combined.
  4. Fold in the Apple: Gently stir in your finely diced/grated apple. Note: If the batter feels too thick because of the fruit, add a splash more milk. It needs to be pourable!
  5. The Pour: Using the WaffleUp measuring cup, pour the batter into the top funnel. Pro Tip: If a piece of apple gets stuck in the funnel, just give it a little nudge with a wooden skewer, but usually, the weight of the batter pushes fine dice right through.
  6. Bake: Cook until the beep. The smell of toasted cinnamon will be incredible!
  7. (Optional) For a caremelised apple topping, Sauté a few thicker apple slices in a pan with a knob of butter and a sprinkle of cinnamon and sugar until soft and golden. Serve on top of the waffle with vanilla ice cream and a drizzle of salted caramel.
